- We practise manual harvesting, transporting the grapes in small containers, and a systematic sorting on tabletops as soon as they arrive.
- Cold pre-fermentation maceration. Long fermentation period in a heat-controlled stainless steel vat. No grape stomping, rather a gentle extraction of the juice.
- 14 months in an oak barrel. 1/3 new barrels, 1/3 1 wine barrels, 1/3 2 wines barrels. Aging process is complete after 8 months.
- Bottled on our property without any fining or filtering.
