- We practise manual harvesting, transporting the grapes in small containers, and a systematic sorting on table tops as soon as they arrive.
- Long fermentation period in a heat-controlled stainless steel vat. No grape stomping, rather a gentle extraction of the juice. 14 months in an oak barrel, 1/3 new barrels, 1/3 1 wine barrels, 1/3 2 wines barrels, etc. Aging process in the vat is complete after 5/6 months.
- Bottled on our property without any fining or filtering.
