- We use ancestral planting methods, without any chemical weed killers, nor synthetic products of any kind.
- We practise manual harvesting, transporting the grapes in small containers, and a systematic sorting on tabletops as soon as they arrive.
- Long fermentation period in a heat-controlled stainless steel vat. No grape stomping, rather a gentle extraction of the juice.
- 12 months in an oak barrel, aging process in the vat is complete after 4 to 6 months. 1/3 new barrels, 1/3 1 wine barrels, 1/3 2 wines barrels
- Bottled on our property without any fining or filtering.
